Indian Pork Ribs
Serves about 6 in about 2 hours
1 jar Vindaloo curry
2 Baby back pork rib racks
salt and pepper to taste
charcoal or gas grill
aluminium foil
½ cup water
Lightly salt and pepper the ribs. Brush Vindaloo curry and let rest for about 15 mins. Fire up the grill. Place ribs on a large piece of foil. Add ½ cup water before you crimp the edges to form a tight seal. On medium heat ( 350 deg.) place the foil package on the grill and close cover. Cook for about 1 ½ hour. For the last ½ hour open the foil package (be careful of steam) and continue cooking with closed cover. Salt to taste. Transfer ribs to platter. Serve with mashed or baked potatoes and grilled vegetables.
