Goan Beef Pot Roast
Serves 8 in about 1 ½ hour
¾ Jar Gosht Masala Curry
3 lbs beef roast (sirloin or eye of round)
3 medium potatoes
1lb baby carrots
pearl onions
1 cup water
salt and pepper to taste.
Peel potatoes and onions and keep ready with carrots in a bowl. In a heavy bottomed pan, pour Gosht Masala Curry and bring to a simmer. Place the beef roast in the pan and brown on all sides on high heat for about a minute on each side. Turn the heat down to medium, add water and add the vegetables. Lightly salt and pepper the vegetables and and place cover. Continue cooking on medium heat for about 1 ½ hour or until vegetables are done. Use meat thermometer for best way to determine doneness. Rare is 140 deg, medium is 160 deg and well-done is 170 deg. Transfer to a platter, slice thinly and arrange vegetables on side. Heat reserved Gosht Masala Curry with drippings to boiling and serve as sauce.
