Coconut Shrimp

Serves 8 in about 25 minutes

1 jar Goa Coconut Curry
3-4 lbs fresh or thawed shrimp (shelled and deveined)
1 lb unsweetened desiccated coconut (thawed if frozen)
oil for frying

Rinse and salt shrimp lightly. In a glass bowl pour Goa Coconut curry. In another bowl set the desiccated coconut. In a deep frying pan heat the oil for frying. When the oil is ready, coat the shrimp in curry and then coconut and add to the oil. Be careful not to burn or splash the hot oil. Fry till golden brown. Remove with a slotted spoon and set on a plate with paper towels. Enjoy hot as appetizer or main dish.
