Chicken
Xakuti -- Coconut Chicken
Serves about 6 in about 45 minutes.
3lbs
or 1 whole chicken cut up
1 lb desiccated frozen or fresh coconut
1 jar Garam Masala Curry
Water to cook
In
a saucepan, pour Garam Masala Curry and warm on medium heat for
a minute or two. Add the chicken and keep stirring until the chicken
is coated with curry. Add a little water and continue cooking. In
the meantime, place thawed or fresh coconut under the broiler until
toasted brown and set aside. Add little water to chicken if sauce
thickens. Continue cooking until chicken is tender about 20-25 minutes.
When chicken is done, fold the coconut into the curry. Garnish and
serve.
