Baigan
Masala -- Fried eggplant
Serves about 4 in about 20 minutes
2-3 medium eggplants
1 jar Garam Masala Curry
Oil for frying
Slice eggplants
about 1inch thick. Add salt and set aside for about 10 minutes.
Drain the water from the bowl. Coat the eggplant with Garam Masala
Curry. In a shallow frying pan, heat oil. When oil is hot, add the
eggplant, being careful not to spill the hot oil. Fry for about
4 minutes and turn over. Continue cooking until golden brown. Drain
on paper towels and serve.
