Aloo
Bhaji -- Potato vegetable
Serves about 4 in about 20 mins
6-8 medium potatoes
½ jar Garam Masala Curry
1 tbsp mustard seeds (optional))
scallions/green onions for garnish
fresh coriander chopped for garnish
Boil potatoes
in salted water until done. Drain, peel and cube and set aside.
In a saucepan, pour ½ jar of Garam Masala Curry on medium
heat until warm, about 1-2 minutes. Add mustard seeds in the sauce
- they will pop, so be careful. Add cubed potatoes and stir until
curry has coated all the potatoes. Lower heat, be careful that the
potatoes don't burn. Turn off heat. Garnish and serve.
